I’m all for an easy to put together lunch. Otherwise I don’t eat anything and then I’m starving at 3pm and eat everything.
These chicken wraps are my kind of lunch. They’re tasty as can be and they’ve got green bits in them which means they must be doing my afternoon a world of good, right?
Growing up my parent’s always whipped up a batch of homemade mayo for Saturday lunch and I guess I caught the homemade mayo bug. Making your own concoctions like mayonnaise makes you feel like you could whip up a loaf of bread while you’re at it, if only you had the time.
It tastes so much better than the shop stuff plus you won’t see any numbers in the ingredients list… I mean, you could just use the store bought stuff, but then what would the point of me giving you a recipe for a humble chicken sambo be?
Homemade mayo
Makes about 3/4 cup of mayo
1 large egg yolk
1 Tsp fresh lemon juice
1/2 teaspoon mustard powder (optional, but it adds zing! Use the hot stuff!)
1/2 tsp salt (add to taste)
3/4 cup good olive oil
But first: the key secrets to making good mayonnaise
Use the freshest, best quality ingredients you can find
Add the oil to the yolk s.l.o.o.o.o.o.w.l.y.
Whisk, whisk, whisk, whisk – keep going, even when your arm is killing you
Toss the egg yolk into a large bowl, add the lemon juice, mustard powder and salt to taste. Whisk together until well combined.
S.l.o.o.o.o.o.w.l.y drizzle a little oil into the bowl, whisking like crazy as you go. Yes, you can use a food processor… I never have so I don’t know how to advise you on that! Once that bit of oil is incorporated, slowly add a little more. Keep going and keep whisking until all the oil has been added and then keep whisking some more. The mixture will start to cream up into a lovely mayonnaisey concoction and then you can stop. Enough with the whisking!
Cover and keep in the fridge for about 2 days (raw eggs… doesn’t keep so you don’t want to make a lot at once! That’s why there are so many numbers on the side of the supermarket version…)

Chicken and rocket wraps
1 wrap
1/2 cooked chicken breast (pan fry or grill), cut up into small pieces
A slathering of homemade mayonnaise
1/2 cup rocket
Mix your chicken with your mayo. Lay down your wrap and add the chicken mix. Pile on the rocket. Roll and cut. Enjoy!
