Cheat’s coconut macaroons to make you swoon

At the risk of sounding like I’m writing an 1800’s manual for housewives, I quickly just want to talk about emergency afternoon tea provisions. Now, I’m fully aware that running out of biscuits to serve with a pot of tea is not exactly an emergency emergency. But it’s nice to have a little something like these 2-ingredient coconut macaroons to offer our friends when they pop in, don’t you think?

I know. I know unannounced friends aren’t everyone’s cup of afternoon tea (and for some it is the equivalent of being perved at naked), but I’m a popper and a popper welcomer. This is possibly a country thing that migrated with me into the city,  because, in my experience, city folk just don’t seem embrace it.

Where the popping began

Growing up there was always a stream of people calling in at my Mum’s back door (never the front). “Anyone home?” and in they’d come for a coffee and a chat that might last through the afternoon, over dinner and, if it was an especially robust chat (or an especially robust cup of coffee), well beyond bedtime. Sometimes all the popping drove Mum a bit nuts, but mostly she welcomed the company.

Coconut macaroons that take less than 15 minutes to bake

I grew up like this, so it’s no surprise that you don’t need to text me, or god forbid phone me, or give any advanced notice whatsoever, if you want to come over to mine. You don’t need an appointment time, carefully scheduled in February to make a May meet-up happen. If you’re in the area and you’ve got a minute, feel free to stop by any time – provided you’re okay if I sometimes tell you to come back later. That’s the only rule.

Emergency afternoon tea provisions

But back to emergency afternoon tea provisions. When you embrace the unexpected guest, you do try to have a treat in the pantry to bring out with the cuppa. That’s when these cheat’s coconut macaroons come into their own.

You can make these 2-ingredient coconut macaroons in about 33 seconds and then they take about 10 minutes to bake. They smell outta this world and taste every bit as good as something made with condensed milk should taste. Obviously these are not an everyday food (or an any day food if you are Sarah Wilson or one of the pale people), but boy, are they delicious. And surely if coconut oil is so good for us it stands to reason that coconut macaroons are even better?

2 ingredient Coconut macaroons

Makes around 24 depending on size
Takes 12 mins

•  A can of condensed milk
•  500g packet of shredded coconut

Preheat oven to 180°CLine a couple of baking trays with baking paper.

Mix together the coconut and condensed milk.

Once completely mixed, grab a heap of the mix and press it together into a ball shape (make them any size you like), put it on the baking tray and flatten. Repeat with all remaining mixture.

Put them into the oven for about 10 minutes until toasted golden brown on the top. Keep an eye on them as time will depend on how big your balls are (a rule of thumb in many areas of life).

Note

I sometimes make these with reduced sugar condensed milk and they are nice like that too. They also work with low-fat condensed milk. This is a bit like ordering a diet coke with your Big Mac, but we are all very complex people, no?
